Sometimes, nothing tastes better than a simple bowl full of hot, steaming, homemade soup…especially tomato soup. Pair it with a yummy grilled cheese sandwich, and you’ve got the perfect lunch combo! What we love best about this recipe is that it calls for simple pantry ingredients.
- immersion blender
- 1/4 c butter
- 1/4 c beef broth
- 1/2 t minced garlic
- 1/4 c flour
- 1 1/2 c milk
- 3 c diced tomatoes
- 1/2 t salt
- 1 T sugar
- 1 t dried basil
- Melt the butter in a large saucepan. Add the broth.
- Add minced garlic and simmer for one minute. Stir in flour and brown slightly.
- Using a whisk, mix in milk and heat through. Add diced tomatoes. (NOTE: We use our bottled V-5 juice instead of diced tomatoes.) Add salt, sugar, and dried basil.
- Mix well with an immersion blender. Let simmer on low, stirring often for 3-5 minutes.
