This is the first year we’ve grown tomatillos on the farm. And, if we are completely honest, prior to this summer, I had never purchased or used a tomatillo in any recipe…never. However, we do believe in using what we grow. (Except for eggplant. I still don’t have a love for eggplant…and don’t know that I ever will.) We loved this yummy tomatillo cilantro ranch dressing. It goes perfectly on a copycat Cafe Rio Salad! We also discovered it makes an awfully good dip for veggies! It’s super fast and easy to make.

Tomatillo Cilantro Ranch Dressing
The perfect dressing for a yummy Cafe Rio Salad…or for dipping your favorite veggies!
Ingredients
- 2 jalapeno peppers seeded
- 2 tomatillos
- 1 clove garlic minced
- juice from 2 limes
- 1 bunch cilantro chopped
- 1 c. milk or cream
- 1 c. mayonnaise
- 1 pkg. ranch dressing mix (generic brand is fine)
Instructions
- Add all ingredients into a blender and blend until smooth. If a runnier consistency is desired, add additional milk.
- Pour into container and cover. Refridgerate until ready to use. If necessary, before using, whisk to recombine ingredients.
